Basic Quiche - cooking recipe

Ingredients
    9-inch unbaked pie shell
    1 egg white, slightly beaten
    4 slices bacon
    1/4 tsp. salt
    4 eggs
    1/2 lb. grated Swiss cheese
    1 1/2 c. evaporated milk
    1/8 tsp. nutmeg
    dash of pepper
Preparation
    Brush pie shell with beaten egg white and refrigerate. preheat oven to 375\u00b0.
    Fry bacon until crisp; drain, crumble. Sprinkle over bottom of pie shell.
    Beat eggs, milk, salt, nutmeg and pepper until combined, not frothy.
    Sprinkle grated Swiss cheese over bacon in pie shell and pour egg mixture over all. Bake on low rack in oven for 35 to 40 minutes, just until puffy and golden.
    Remove from oven and place on rack; cool for 10 minutes before cutting.
