Italian Pizzelles - cooking recipe

Ingredients
    6 eggs
    1 1/4 c. sugar
    1 c. olive oil
    3 c. flour
    1 tsp. vanilla or anise
    fresh lemon or orange rind may be used (if desired)
Preparation
    Beat eggs, sugar and oil.
    Add vanilla, then flour.
    Press with pizzelle iron.
    Cook until golden brown.
