Spinach Lasagne Rolls - cooking recipe

Ingredients
    1 Tbsp. oil
    1 (10 oz.) pkg. leaf spinach, thawed, drained and chopped
    1 (15 oz.) Ricotta cheese
    1/2 c. grated Parmesan
    1 egg, beaten
    1 Tbsp. parsley, chopped
    salt and pepper
    2 c. spaghetti sauce
    8 lasagne noodles, freshly cooked
    1 1/4 c. grated Mozzarella cheese
Preparation
    Preheat oven to 350\u00b0.
    Heat oil in skillet over medium heat. Add spinach and cook until tender, 4 minutes.
    Cool.
    Combine spinach, Ricotta, Parmesan, egg and parsley in a large bowl.
    Add salt and pepper.
    Spread 1 cup spaghetti sauce in bottom of an 8-inch dish.
    Put 1 lasagne noodle (dry) on wax paper sheet. Spread 1/3 cup Ricotta mixture over noodle.
    Roll up noodle.
    Place seam, side down, in dish.
    Repeat with all noodles.
    Top with 1 cup sauce.
    Sprinkle with Mozzarella.
    Bake about 45 minutes, until cheese melts.
