Kentucky Burgoo - cooking recipe
Ingredients

2 lb. lean beef with bone
1 large disjointed hen
1 lb. veal
4 qt. water
1 pt. corn
2 c. diced potatoes
2 c. diced onions
1 pt. butter beans
3 carrots
1 stalk sliced celery
1 qt. tomatoes
2 green peppers
1 pt. sliced okra
4 Tbsp. salt
1 tsp. Tabasco
Preparation
-
Simmer meat until well done.
Defat liquid and separate meat from bones.
Add remaining ingredients and cook very slowly for at least 4 hours.
The mixture should be very thick.
Add water from time to time to keep from sticking.
Season to taste.
Makes about 36 cups.
