Lemon Meringue Pie - cooking recipe
Ingredients

1 pie crust
1/4 c. cornstarch
2 Tbsp. flour
1 c. sugar
2 c. boiling water
2 Tbsp. margarine
1 Tbsp. grated lemon peel
1/4 tsp. salt
3 egg yolks
6 Tbsp. lemon juice
Preparation

In top of double boiler, mix cornstarch, flour, sugar and salt.
Gradually stir in boiling water.
In small bowl, beat egg yolks into cornstarch mixture.
Place top of double boiler over boiling water and cook about 5 minutes until filling is thick, stirring occasionally.
Remove pot from boiling water.
Mix in margarine, lemon peel and lemon juice.
Cover in cooker and cool slightly.
Pour in crust.
Top with your favorite meringue.
