Cranberry Surprise Loaf - cooking recipe
Ingredients

2 (3 oz.) pkg. cream cheese, softened
1 egg
2 c. all-purpose flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
3/4 c. orange or apple juice
1/4 c. melted margarine or butter
1 egg, beaten
1 1/2 c. coarsely chopped, fresh cranberries
1/2 c. chopped nuts
Preparation

Heat oven to 350\u00b0.
Grease and flour bottom only of 9 x 5 x 2 3/4-inch loaf pan (there is too much batter for an 8 x 4-inch loaf pan).
In small bowl, beat cream cheese until light and fluffy. Add 1 egg and blend well; set aside.
Lightly spoon flour into measuring cup; level off.
In large bowl, mix together flour, sugar, baking powder, baking soda and salt.
Stir in juice, margarine and beaten egg.
Fold in cranberries and nuts.
