Ratatouille - cooking recipe

Ingredients
    2 large onions, sliced thin
    2 cloves garlic, mashed
    1 medium eggplant, peeled and cut in 1/2-inch cubes
    6 medium zucchini or yellow squash, sliced
    2 large green or red sweet peppers, cut into strips
    4 large fresh tomatoes, peeled and chopped
    1 1/2 tsp. salt
    pepper to taste
    2 Tbsp. fresh or 2 tsp. dried basil
    1/2 c. minced parsley
    6 Tbsp. olive oil
Preparation
    Layer vegetables, sprinkling seasonings on each layer.
    Press vegetables down tightly.
    Cook on top of stove over low heat about 1 1/2 hours.
