Oven Roasted Chicken And Potatoes - cooking recipe

Ingredients
    3 Tbsp. olive oil
    2 1/2 to 3 lb. chicken, cut up
    3 medium baking potatoes
    1 garlic clove
    2 tsp. rosemary
    6 Tbsp. lemon juice
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Preheat oven to 400\u00b0.
    Grease baking dish with 1 tablespoon of oil.
    Toss chicken and potatoes with the remaining 2 tablespoons of oil.
    Arrange in dish in an even layer.
    Sprinkle with garlic, rosemary and 4 tablespoons lemon juice.
    Cover loosely with foil. Bake 30 minutes.
    Uncover and bake 15 minutes longer, turning chicken and potatoes.
    Pour remaining lemon juice over chicken. Serve.
    Yields 4 servings.
