Pineapple Cake - cooking recipe

1 Duncan Hines yellow (butter) cake mix
1 (No. 2) can crushed pineapple
1 1/2 c. sugar
1 egg white, beaten to peaks
2 bananas (optional)
Angel Flake coconut (optional)
Preparation

Bake cake as directed in 3 layers.
Drain pineapple; use juice with 1 1/2 cups sugar and cook to \"spin a thread\" stage. Pour 1/2 of this syrup into beaten egg white, beating constantly. Then use remaining 1/2 syrup, adding pineapple and cook until it thickens slightly.
Spread cooked pineapple mixture between layers of cake (slicing bananas onto pineapple between layers if desired).
Spread beaten egg white icing over top and sides of cake. Sprinkle with Angel Flake coconut, if desired.
