Quick Sweet And Sour Supper - cooking recipe

Ingredients
    1 lb. boned chicken breasts, cut into thin strips
    1 garlic clove, minced
    2 Tbsp. vegetable oil
    1 bunch scallions, sliced
    1/2 c. apricot preserves
    1/2 c. chili sauce
    prepared Minute rice
Preparation
    Cook and stir chicken and garlic in hot oil in large skillet or wok until tender and lightly browned, about 7 minutes.
    Stir in scallions, preserves and chili sauce.
    Heat through.
    Serve over rice.
    Supposed to feed 4; 2 or 3 is more like it.
