Vegetable Pita Melt - cooking recipe

Ingredients
    1/4 c. broccoli
    1/4 c. cauliflower
    2 Tbsp. sliced green onion
    2 Tbsp. sliced tomatoes
    1 1/2 tsp. buttermilk salad dressing
    1 whole wheat pita
    1 oz. Cheddar cheese, grated
Preparation
    Blanch broccoli and cauliflower.
    In a small mixing bowl combine all ingredients except pita and cheese, mixing well until thoroughly coated.
    Cut pita in half crosswise, making 2 halves. Open each half to form a pocket.
    Fill each pita half with half of the vegetable mixture and then with 1/2 ounce cheese.
    Set pita halves on paper plate and microwave on High for 40 seconds.
    Makes 1 serving.
    May be increased.
