Alo-Balo Polo - cooking recipe

Ingredients
    4 c. fresh cherries, pitted
    6 Tbsp. sugar
    1/4 c. olive oil
    2 lb. chicken
    1 tsp. salt
    medium onion, peeled and sliced
    1/2 c. water
    2 c. rice
Preparation
    Wash the rice and soak in salt water for about 2 hours. Combine the cherries and sugar in a 2 or 3-quart pan and bring to a boil over high heat while stirring gently.
    Reduce heat to low and simmer, uncovered, for 2 to 3 minutes.
    Remove from heat.
