Kapok Tree Corn Fritters - cooking recipe

Ingredients
    1 c. all-purpose flour, sifted
    1 Tbsp. sugar
    1 scant tsp. salt
    1 egg
    1 1/2 tsp. baking powder
    1/4 c. milk
    1/2 c. whole kernel corn, drained
    fat for frying
Preparation
    Sift flour a second time with baking powder, sugar and salt. Add egg, milk and corn. Stir until well blended. Drop batter into hot fat a teaspoon at a time. Maintain fat to 350\u00b0. Fry until golden brown, turning once with spoon.
    Remove fritters from fat; drain on paper towels. Serve hot.
    Makes 4 to 6 servings.
