Black Bean Turkey Chili - cooking recipe
Ingredients

2 Tbsp. olive oil
2 medium onions, chopped
1 red bell pepper, chopped
1 lb. Italian turkey sausage
2 lb. ground turkey
6 cloves garlic, minced
8 oz. diced green chiles
1/2 tsp. pepper
1 tsp. salt
3 Tbsp. chili powder
1 Tbsp. dried oregano
1 Tbsp. dried basil
1 (12 oz.) can tomato paste
1 (28 oz.) can Italian plum tomatoes
1 (16 oz.) can Italian plum tomatoes
1 c. beer
1 (32 oz.) can black beans, rinsed and well drained
1/4 c. chopped fresh cilantro
Preparation

In a large skillet or Dutch oven, heat oil over low heat. Saute the onions and red pepper for about 10 minutes or until tender but not browned. Add the sausage and turkey and brown over medium heat. Drain any excess fat from pan. Add the garlic, chiles, pepper, salt, chili powder, oregano, basil and tomato paste. Stir in the tomatoes, beer and beans. Simmer over low heat for 20 to 30 minutes. Taste to adjust seasonings. Stir in cilantro leaves before serving. May be made ahead and reheated. Serves 8 to 10.
