Chicken Consomme With Avocado - cooking recipe

Ingredients
    2 1/2 (14 1/2 oz.) cans chicken broth
    2 avocados, peeled and thinly sliced
    2 lemons, sliced
    1/2 c. dry sherry
    1/2 c. chopped parsley
Preparation
    In a large saucepan, heat the chicken broth; do not let it boil.
    Place slices of avocado in the bottom of each soup plate. Top with 2 slices of lemon.
    Pour the chicken broth over the avocado and lemon.
    Add 1 1/2 tablespoons of sherry to each bowl. Sprinkle chopped parsley on top.
    Yields 4 to 6 servings.
