Fricasseed Rabbit - cooking recipe

Ingredients
    2 rabbits (2 lb. each)
    1/4 c. butter
    1/4 c. shortening
    2 eggs, beaten
    water
    1/2 c. finely ground soda cracker crumbs
    2 medium onions, halved
    dumplings
Preparation
    Preheat
    oven
    to
    350\u00b0.
    Wash rabbits thoroughly.
    Pat dry. Cut
    into pieces, discarding bony rib section.
    In Dutch oven, melt
    butter
    and shortening over medium-high heat.
    Mix beaten eggs with 1 tablespoon water.
    Dip rabbit in egg.
    Roll in cracker crumbs.
    Brown rabbit, turning until all sides are evenly browned.
    Add
    water to cover and onions.
    Cover.
    Bake about 2 hours or until tender.
    Remove onions.
    Add dumplings. Cook for 20 minutes.
