Mexican Chicken And Rice - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. chicken breast, cubed
    1 onion, chopped
    1 bell pepper, chopped
    1 (10 oz.) pkg. frozen corn, thawed
    1 c. chicken broth
    1 c. salsa
    1 1/2 c. Minute rice
    1/2 c. Cheddar cheese
Preparation
    Heat oil in large skillet on medium heat.
    Add chicken, onion and pepper.
    Cook and stir until chicken is cooked through.
    Add corn, salsa and broth; bring to a boil.
    Stir in rice and cover. Remove from heat.
    Let stand 5 minutes and fluff with fork. Sprinkle with cheese and let stand 2 minutes.
