Chicken In Orange Sauce - cooking recipe
Ingredients

1/4 c. frozen orange juice concentrate
1/4 c. orange marmalade
1 Tbsp. lemon juice
1/2 tsp. cornstarch
1/4 tsp. ginger
1/8 tsp. nutmeg
1/8 tsp. salt
4 boneless breasts or 1/2 for light meals
1 Tbsp. butter
Preparation

Combine first 7 ingredients and set aside.
Flatten chicken some (1/4 inch recommended).
In a skillet, saute chicken in water until lightly browned on both sides.
Pour orange sauce mixture over chicken.
Simmer uncovered 6 to 8 minutes or until chicken is cooked, basting occasionally.
Spoon sauce over chicken and serve with rice pilaf or couscous.
Nice with a garnish of oranges and kiwi fruit.
