Potato Pancakes - cooking recipe

Ingredients
    2 lb. potatoes
    1 egg
    1/3 c. finely chopped onion
    3 Tbsp. flour
    1 tsp. salt
    1/4 c. butter or oleo
Preparation
    Wash potatoes.
    Pare thinly and remove eyes.
    Shred enough potatoes to make 4 cups.
    Drain potatoes thoroughly.
    In a small mixer bowl, beat egg until thick and lemon colored.
    Mix potatoes, onion, flour and salt.
    Melt butter or oleo in a large skillet over low heat.
    Shape potato mixture into 8 patties. Place in skillet.
    Cook over medium heat, turning once, about 5 minutes or until golden brown.
