English Mincemeat(5 Pounds) - cooking recipe

Ingredients
    8 oz. raisins
    8 oz. white raisins
    4 oz. almonds, blanched
    1 lb. cooking apples, peeled and cored
    4 oz. mixed citrus fruit
    8 oz. currants (optional)
    1 lb. softened dark brown sugar
    8 oz. shredded suet or Crisco
    1 tsp. ground nutmeg
    1 tsp. allspice
    1/2 tsp. ground cinnamon
    6 tsp. sherry
    finely grated rind of one lemon and juice
Preparation
    Wash jam jars thoroughly.
    Chop or coarsely mince raisins, sultanas (white raisins), almonds and apples and mixed peels into a bowl.
    Stir in currants with sugar, suet and spices.
    Mix all ingredients together with sherry, lemon rind and juice.
