Great Hollow Fish Chowder - cooking recipe
Ingredients

2 onions, finely chopped
1/4 c. butter
4 peeled and diced potatoes
2 c. boiling water or fish stock
3 c. light cream
2 leeks (white part only), finely chopped
salt and pepper to taste
1 lb. mixed cod and flounder
1/2 c. grated cheese
Preparation

Saute onions and leeks in butter until soft.
Add potatoes, salt, pepper and water or fish stock; bring to a boil.
Layer on top of vegetables.
Reduce heat and simmer, covered, for 30 minutes.
Add light cream and warm, but do not allow to boil. Correct seasonings to taste.
