Eggplant Skillet - cooking recipe

Ingredients
    1 lb. ground beef
    1/4 c. chopped onion
    1/4 c. chopped celery (optional)
    1 (8 oz.) can tomato sauce
    1/2 c. water
    3/4 tsp. oregano
    3/4 tsp. chili powder
    1 small eggplant, cut into 1/2-inch slices
    1 c. shredded sharp Cheddar cheese
    paprika
    Parmesan cheese
Preparation
    Cook beef, onion and celery until meat is brown.
    Drain off extra fat.
    Stir in tomato sauce, water, oregano and chili powder. Season eggplant slices with salt and pepper.
    Arrange on top of meat sauce.
    Cover and simmer until eggplant is tender, 15 to 20 minutes.
    Top with cheese (Cheddar).
    Sprinkle with paprika and Parmesan cheese.
    Heat until cheese is melted.
    Makes 4 to 5 servings.
