French Potato Salad - cooking recipe

Ingredients
    1 1/2 lb. sliced cooked potatoes
    2 Tbsp. finely minced shallots
    1/4 c. chicken stock
    1 1/2 Tbsp. wine vinegar
    salt
    3 Tbsp. chopped fresh parsley
    3 Tbsp. light olive oil
    fresh ground white pepper
Preparation
    In a large bowl, gently toss with shallots, a sprinkling of salt and pepper, stock, vinegar and parsley.
    Let steep for 10 minutes.
    Toss gently several times.
    Taste; correct seasoning and oil.
    Toss before serving.
