Rolled Fillet Of Sole - cooking recipe

Ingredients
    2 lb. fresh sole or orange roughy
    1 tsp. salt
    1/4 tsp. pepper
    1/2 lb. grated Cheddar cheese
    1 medium onion, chopped
    1 egg, beaten
    1 Tbsp. water
    3 slices bread, crumbled
    1 stick butter
Preparation
    Sprinkle fish with salt and pepper.
    Sprinkle cheese and onion on each fillet.
    Roll, jelly roll style; secure with a toothpick. Dip each roll in egg and water wash.
    Coat with bread crumbs. Place in a well buttered glass dish (11 x 7-inch).
    Pour melted butter over top; bake at 400\u00b0 for 25 to 30 minutes.
