Morning Glory Muffins - cooking recipe
Ingredients

2 c. flour
1 c. sugar
2 tsp. baking soda
1 tsp. nutmeg
1 tsp. cinnamon
1 apple, peeled and grated
1/2 c. coconut
1/2 c. pecans
1 c. grated carrots
3 eggs
1/2 c. vegetable oil
2 tsp. vanilla
1/2 c. raisins
Preparation

Preheat oven to 350\u00b0.
Combine flour, sugar, soda, cinnamon and nutmeg in a large bowl.
Add apple, raisins, coconut, pecans and carrots.
Mix thoroughly.
Beat eggs slightly in a separate bowl. Add oil and vanilla to eggs; beat well.
Pour egg mixture into dry ingredients and combine quickly.
Do not overbeat.
Spoon into greased muffin tins.
Bake 20 to 25 minutes or until golden brown. Makes 18 muffins.
