Potato Gratin With Boursin Cheese - cooking recipe

2 c. whipping cream
1 (5 oz.) pkg. Boursin cheese with herbs
3 lb. red new potatoes, scrubbed and thinly sliced
1 1/2 Tbsp. chopped fresh parsley
Preparation

Butter a 9 x 13-inch baking dish.
Stir cream and cheese in large saucepan over medium heat until melted and smooth. Arrange 1/2 of potatoes in overlapping rows.
Season with salt and pepper.
Pour over 1/2 of the cheese mixture.
Arrange rest of potatoes; season with salt and pepper and rest of cheese.
Bake at 400\u00b0 for 1 hour until top is golden and potatoes are tender. Sprinkle with parsley.
Makes 8 servings.
