Fresh Rhubarb Betty(Microwave) - cooking recipe
Ingredients

6 c. diced fresh rhubarb
1 1/4 c. sugar
2 1/2 Tbsp. quick-cook tapioca
1 tsp. grated lemon peel
1 Tbsp. grated orange peel
2 3/4 c. soft bread cubes
1/3 c. margarine
1 tsp. vanilla
Preparation

Combine first five items in a bowl and set aside.
Put bread cubes in a bowl.
Melt butter and pour over bread.
Add vanilla and toss.
In 1 1/2-quart dish, make alternate layers of rhubarb and bread cubes, ending with buttered bread cubes.
Cook in microwave, covered, about 12 minutes or until rhubarb is cooked.
Serve warm or chilled with Cool Whip.
