Sweet Potato Surprise - cooking recipe
Ingredients

6 cooked sweet potatoes (I boil and peel)
1 c. brown sugar
1 1/2 Tbsp. cornstarch
1/4 tsp. salt
1/8 tsp. cinnamon
1 tsp. grated orange peel
1 (16 oz.) can apricot halves, drained (reserve syrup)
2 Tbsp. butter
1/2 c. pecan halves (optional)
1/4 c. orange juice
Preparation

Place sweet potatoes in greased 9 x 12-inch baking dish. Combine sugar, cornstarch, salt, cinnamon and orange peel in a pan.
Drain apricots and reserve syrup.
Stir 1 cup syrup into cornstarch mixture.
Cook and stir over medium heat until boiling. Boil 2 minutes, then add apricots, butter, pecans and orange juice.
Pour over potatoes and bake uncovered for 25 minutes. Bake at 375\u00b0.
