Elisabeth'S Lemon Chicken - cooking recipe
Ingredients

1 whole chicken
1 lemon
1/4 c. olive oil
3 cloves garlic
2 tsp. dried basil
2 tsp. dried thyme
1 tsp. kosher salt
1 tsp. brown sugar
1/8 tsp. pepper
plastic bag and twistie
Preparation

In blender, combine juice of lemon (save the rind), olive oil, garlic, basil, thyme, brown sugar, salt and pepper.
Blend until smooth.
Place chicken in a plastic bag.
Pour \"goop\" inside and outside of chicken.
Shove the rinds inside the bird and seal bag with twistie.
Refrigerate for at least 1 day, but 2 is better. Remove rinds and place in roasting pan.
Pour remaining marinade over chicken.
Bake in 400\u00b0 oven for 45 to 60 minutes.
Skim fat and pour goop over chicken and serve.
