Oat Bran Muffins - cooking recipe
Ingredients

1 3/4 c. oat bran
1/2 c. whole wheat flour
1 1/2 Tbsp. low sodium baking powder
1/3 c. date sugar or 3 Tbsp. sugar
3 egg whites
1 c. non-fat milk
1/3 c. frozen unsweetened apple juice concentrate
1 Tbsp. safflower oil
1/4 c. raisins
1/4 c. chopped almonds
Preparation

Pre heat oven to 425 degrees and coat muffin tins with nonstick cooking spray. Place dry ingredients in mixing bowl and blend with fork. Beat liquid ingredients together in separate bowl. Add liquid
& dry ingredients together and blend with a fork until flour is moistened and raisins and nuts. Fill muffin time 3/4 full place in oven and lower temperature to 400 degrees. Bake for 17-20 minutes or until browned
