Zucchini Jack Casserole - cooking recipe
Ingredients

2 lb. zucchini (about 8 small)
4 eggs
1 1/2 c. milk
1 tsp. salt
2 tsp. baking powder
3 Tbsp. flour
1/4 c. chopped parsley
1 clove garlic, minced
1 small onion, finely chopped
1 (7 oz.) can diced green chiles
3/4 lb. Jack cheese, shredded (about 4 c.)
1 c. seasoned croutons
3 Tbsp. butter or margarine, melted
Preparation

Slice zucchini crosswise, 1/4 inch thick (about 7 cups).
In large bowl, beat together eggs, milk, salt, baking powder and flour until smooth.
Stir in parsley, garlic, onion, green chiles, cheese and zucchini.
Spoon into a greased 9 x 13-inch baking dish.
Toss croutons in the melted butter and sprinkle on top.
Bake uncovered in 350\u00b0 oven for 35 to 40 minutes, until set in center and squash is tender.
Let stand about 10 minutes before serving.
Makes about 10 servings.
