Smoked Chicken - cooking recipe

Ingredients
    1 large roasting chicken
    1 gal. water
    1/2 c. canning salt
    1 c. tender quick
    5 Tbsp. liquid smoke
Preparation
    Put chicken in larger container (like a 5 gallon plastic pail).
    Pour brine (water, canning salt, tender quick and liquid smoke) over it and leave in brine for 24 hours.
    Turn chicken end for end a few times during brining time.
    Rinse off.
    Dry off. Put breast side down on rack.
    Roast for 1 hour at 350\u00b0, then turn oven down to 250\u00b0 until done.
