Beans-N-Rice That Fill You Up - cooking recipe

Ingredients
    2 tsp. olive oil
    1 c. chopped onion
    1/2 c. chopped onion (set aside)
    1/2 c. chopped green pepper
    2 c. cooked brown rice
    1/2 tsp. ground cumin
    1/8 tsp. dried coriander
    1/4 tsp. ground red pepper
    1 (15 oz.) can black beans, rinsed and drained
    chopped tomato (optional)
Preparation
    In nonstick pan, heat oil; add 1 cup onion and 1/2 cup green pepper and cook until tender.
    Add rice, cumin, red pepper and coriander.
    Mix and heat 2 minutes.
    Add beans; heat.
    Add uncooked onion and tomato if desired.
    Approximately 125 calories per 1/2 cup; less than 2 grams of fat.
