Bean Soup - cooking recipe

Ingredients
    1 lb. dry navy beans
    1 meaty ham bone
    1 large onion, chopped
    2 celery stalks, chopped
    2 carrots, grated
    salt to taste
    1/2 tsp. pepper
    1/2 tsp. thyme
    1 (28 oz.) can tomatoes
    1 1/2 c. finely shredded spinach leaves
Preparation
    Wash beans.
    Add
    water, bring to boil.
    Boil 2 minutes and remove from heat.
    Let stand 1 hour.
    Drain beans, add ham bone and 3
    quarts
    water
    to beans.
    Simmer 1 1/2 to 2 hours. Remove bones
    from
    broth and when cool enough to handle, trim meat from bones.
    Add ham, onion, celery, carrots and seasonings.
    Simmer for
    1
    hour or until beans are done.
    Add tomatoes.
    Cook 10 to 15 minutes.
    Just before serving add spinach leaves.
