California Apricot Fruit Salad - cooking recipe

Ingredients
    2 c. fresh apricots (about 1 lb.)
    1 1/2 c. sliced strawberries
    1 1/2 c. peeled and sliced kiwi fruit
    1/4 c. apricot nectar
    1/4 c. coconut, lightly toasted
    1 Tbsp. chopped mint leaves
Preparation
    Combine all ingredients in medium size bowl.
    Refrigerate until chilled.
    Serve as a salad or arrange on wooden skewers as a fruit kabob.
    Yield:
    5 servings; 0 cholesterol.
