Eggplant Casserole - cooking recipe

Ingredients
    2 c. eggplant, cooked and drained
    1 medium chopped onion
    1 or 2 cans whole tomatoes, drained
    4 eggs
    1 c. bread crumbs
    1 1/2 c. grated cheese
    2 Tbsp. bacon grease or butter
Preparation
    Saute onion in bacon grease or butter and add tomatoes and eggplant (mashed slightly with potato masher).
    Add eggs; stir in cheese.
    Add bread crumbs.
    Top with remaining crumbs.
    Bake at 350\u00b0 for 20 to 25 minutes.
