Oatmeal Muffins - cooking recipe
Ingredients

1 c. rolled oats
1 c. buttermilk or sour milk
1/3 c. soft shortening (part butter)
1/2 c. brown sugar
1 egg
1 c. sifted flour
1 tsp. baking powder
1/2 tsp. soda
1 tsp. salt
Preparation

Soak first 2 ingredients together for 1 hour. Mix shortening, brown sugar and egg together thoroughly. Sift flour, baking powder, soda and salt together. Stir in alternately oat mixture and shortening mixture. Mix well together. Fill greased muffin cups 2/3 full. Bake until golden brown at 400\u00b0 for 20 to 25 minutes. Makes 12 individual muffins.
