Spanish Rice - cooking recipe

Ingredients
    1 Tbsp. shortening
    1 c. uncooked long grain rice
    1 onion, finely chopped
    1 small can chicken broth
    1 c. water
    1 1/2 c. tomatoes, chopped
Preparation
    Melt shortening in heavy skillet.
    Pour in rice and onion; brown over low heat, stirring frequently.
    Add broth and tomatoes. Do not stir.
    Cover and let steam over low heat for 30 to 45 minutes.
    Serve immediately.
