Basic Pastry Puffs - cooking recipe
Ingredients

1 c. water
1/2 c. butter, cut in small pieces
1/2 tsp. salt
1 c. all-purpose flour
4 large eggs
Preparation

Mix the water, butter and salt in a medium saucepan.
Heat just to boiling.
Immediately remove from heat and add the flour all at once.
Stir with a wooden spoon until mixture forms a ball. Return to medium heat and cook, stirring constantly until paste has dried slightly.
Remove from heat and let cool for 5 minutes. Beat in eggs one at a time, waiting until each is incorporated before adding another.
When each egg is added and you start to beat it in, the mixture separates slightly and look like Southern dumplings.
Continue beating until the mixture looks like mashed potatoes. Do this with each egg.
