Zucchini Pilaf - cooking recipe
Ingredients

2 zucchini, cut up
2 Tbsp. olive oil
2 cloves garlic, chopped
1 c. long grain rice
2 Tbsp. butter
1 1/2 c. chicken soup stock
1/2 c. white wine
salt to taste
fresh-grated Parmesan or Romano cheese
Preparation

Saute zucchini in the oil and garlic.
Remove from the pan. Add the rice and brown in butter.
Place the rice in a saucepan. Add the soup stock and white wine.
Bring to a boil without the lid.
Add salt.
Place the zucchini on the top of the rice.
Do not stir.
Cover and simmer until rice is tender, about 20 minutes.
Add the cheese when serving.
