Stuffed Zucchini - cooking recipe
Ingredients

2 medium zucchini
1 Tbsp. oil
1/2 tsp. basil, crushed
1/2 c. milk
1/3 c. grated Parmesan cheese
1/3 c. chopped onion
2 tsp. flour
dash of pepper
1 egg, beaten
Preparation

Cut squash in half lengthwise.
Place cut side down in dish in microwave.
Microwave on High, covered, 2 to 3 minutes or cook in boiling water 3 to 4 minutes.
Scoop out pulp, leaving a quarter-inch shell; set aside.
Cook onion in hot oil until tender. Add chopped zucchini and cook 1 minute.
Stir in flour, basil and pepper.
Cook and stir one more minute.
Gradually add zucchini to egg, stir in Parmesan.
Spoon mixture into shells.
Bake in square baking dish, uncovered, at 350\u00b0 for 25 to 30 minutes or until brown.
Makes 4 servings.
