Crab Newberg - cooking recipe
Ingredients

4 Tbsp. butter
2 c. crab meat, cooked
3 oz. dry sherry
1 c. cream
pinch of cayenne pepper
pinch of nutmeg
salt to taste
3 egg yolks, beaten
Preparation

Melt butter in saucepan.
Add crab meat and spices and simmer on slow heat for 3 minutes.
Add 2 ounces of sherry and let it reduce by one-half, about 2 minutes, then add cream.
Dilute egg yolks with 1 ounce sherry.
Add and mix carefully.
Cook and stir until thickened.
Serve over rice.
Serves 4 people.
