Potato Cakes - cooking recipe
Ingredients

5 med. potatoes, grated
2 Tbsp. flour
5 Tbsp. shredded cheddar cheese
2 eggs, beaten
1/2 tsp. salt
1/2 med. onion, diced finely
1/2 tsp. salt
1/2 oil
Preparation

Combine all ingredients in mixing bowl, except oil.
Mix well.
Drain any liquid that accumulates.
Pour oil in skillet to 1/8 inch deep.
Heat to 350\u00b0.
Drop potato mixture, 1/4 c. at time, into hot oil.
Flatten, forming a circle.
Cook 3 minutes on each side or until potatoes are brown.
Makes 8 to 10 servings.
