Solyanka(A Russian Fish Soup With Capers And Onions) - cooking recipe

Ingredients
    1 c. dry white wine
    2 c. minced onion
    2/3 c. minced celery
    2/3 c. minced carrots
    2 c. chopped tomatoes
    1 1/2 lb. whitefish (cod, halibut, etc.)
    2 cucumbers
    4 c. water
    2 Tbsp. capers, drained
    2 Tbsp. minced gherkins
    2 Tbsp. fresh lemon juice
    salt and freshly ground pepper
    4 Tbsp. minced parsley
Preparation
    In a large soup pot, heat the wine.
    Add the onion and cook until softened.
    Add the celery, carrots and the tomatoes and continue to cook for 5 minutes.
    Peel, seed and slice the cucumber (about 1 1/2 cups); cut the fish in large chunks.
    Add both to the soup and cook 3 minutes longer.
    Add the water; bring to a boil. Lower heat and simmer until the fish flakes easily (about 10 minutes).
    Turn off the heat.
    Add remaining ingredients and serve immediately.
    Serves 6.
