Thyme Roasted Vegetables - cooking recipe

Ingredients
    1 tsp. chopped fresh thyme, or 1/4 tsp. dried
    1/2 tsp. salt
    2 tsp. finely chopped garlic
    2 Tbsp. olive or vegetable oil
    1 1/2 c. 1 inch pieces fresh asparagus
    1 1/2 c. thin strips red pepper
    1 1/2 c. lengthwise quartered baby carrots
    1 c. sliced 1/2 inch leeks
Preparation
    Heat oven to 400 degrees.
    In a large bowl, stir together thyme, salt, garlic, and oil.
    Add vegetables, and mix gently to coat.
    Place vegetables in a 9x13 inch baking pan.
    Cover with foil, and bake, stirring occasionally, for 25 minutes. Uncover; continue baking for 15 to 20 minutes, stirring once until vegetables are tender and just start to brown.
