Sweet Potato Muffins - cooking recipe
Ingredients

2/3 c. canned or fresh sweet potatoes
4 Tbsp. margarine
1/2 c. sugar
1 egg
3/4 c. flour
1/2 tsp. salt
1/4 tsp. nutmeg
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 c. milk
4 Tbsp. walnuts
4 Tbsp. raisins
Preparation

Puree sweet potatoes in food processor or blender.
Cream margarine and sugar.
Beat in egg and potatoes.
Add dry ingredients with milk, nuts and raisins.
Do not overmix! Can sprinkle cinnamon and sugar to top.
Bake for 25 minutes in 400\u00b0 oven.
Makes approximately 15 large muffins.
