Savory Spinach Diamonds - cooking recipe

Ingredients
    2 Tbsp. oil
    1 c. finely chopped onions
    1 clove garlic, minced
    2 (10 oz.) pkg. frozen chopped spinach, thawed
    4 large eggs, slightly beaten
    1/2 c. milk
    1 c. lightly packed fresh bread crumbs
    2 c. (8 oz.) shredded Jack cheese
    1 c. grated Parmesan cheese
    1/4 lb. Italian salami, finely chopped (about 1 c.)
    1/2 c. minced parsley
    1/2 tsp. mixed Italian seasoning, crumbled
    1/4 tsp. each sage and nutmeg
Preparation
    Heat oil in medium skillet over medium heat.
    Add onions, cook and stir until soft and golden, 5 to 6 minutes.
    Stir in garlic; cook 30 seconds.
    Remove from heat.
    Squeeze spinach to remove excess moisture.
    Whisk eggs and milk.
    Stir in spinach, onion mixture and bread crumbs; mix well.
    Stir in cheeses.
    Add remaining ingredients; mix well.
    Place mixture in pan; spread evenly.
    Bake 40 minutes.
    Cool on wire rack.
    Serve slightly warm or at room temperature.
    To serve, cut diagonally into 2 to 3-inch diamonds.
    Makes about 40.
