Zesty Carrots(Serves 8) - cooking recipe

Ingredients
    6 to 8 carrots, cooked, chunked and drained (reserve 1/4 c. liquid)
    4 Tbsp. finely chopped onion
    3/4 tsp. horseradish
    1/2 c. mayonnaise
    salt and pepper to taste
    1/2 c. bread crumbs
    1/4 c. melted butter
Preparation
    Mix onion, horseradish and mayonnaise together with the liquid.
    Place cooked carrots in a buttered casserole dish.
    Pour mixture over top of carrots.
    Sprinkle with bread crumbs and top with melted butter.
    Bake at 375\u00b0 for 15 to 20 minutes.
