Squash And Hominy Dish - cooking recipe
Ingredients

2 lb. zucchini or summer squash
1 large chopped onion
4 Tbsp. butter
1/2 c. water
2 (16 oz.) cans hominy, drained
2 jalapeno peppers, seeded and chopped (wear plastic gloves when handling)
1 1/2 c. sour cream
1 tsp. salt
2 c. grated sharp cheese
crushed corn chips (for topping)
Preparation

Preheat oven to 325\u00b0. In large skillet, combine the zucchini or squash, onion, butter and water; cook slowly until tender. Add the hominy, pepper, sour cream, salt and 1 cup cheese. Pour into a greased 3-quart baking dish. Top with remaining cheese and sprinkle with crushed corn chips. Bake 1 hour at 325\u00b0.
