Ingredients

4 eggs, separated
2 c. sugar (this includes the sugar for the whites)
2 lemons, rind and juice
1 tsp. lemon extract
2 c. milk
6 Tbsp. flour
pinch of salt
Preparation

Beat
egg whites until stiff.
Add sugar and beat until very stiff.
Set aside.
Beat egg yolks and add milk, a little at
a time.
Add
sugar,
lemon
juice,
rind, salt and lemon extract. Add
flour.
Mix well.
Fold in egg whites.
Pour in buttered 9
x 13-inch glass baking dish.
Set in pan of water and bake
at 300\u00b0 for about 1 hour.
Cake will brown slightly when done.
